3 ingredient Carrot Salad Recipe:
1 pound of carrots, shredded
3/4ths of a cup of mayonnaise
1 cup raisins
Directions: Mix together!

We like to use our homemade mayonnaise but store bought tastes fine too. I also like to use organic raisins that I buy in bulk from Azure Standard.
Adjust the amounts based on your preferences and how many people you are feeding. This recipe, using one pound of carrots, is enough to feed my family of 8 (including 3 teenagers!) and everyone goes back for seconds.
Store any leftovers in the fridge. The leftovers have never lasted more than a day in my house, so I’m not really sure how long they last…..
