We have Swiss Chard year round here. It is the most prolific plant we grow. Over the years I have experimented with different recipes to encourage my family to eat Swiss chard (and eat it, and eat it…) and this Swiss chard recipe is a favorite! Besides adding it to smoothies, soups and salads, there are two dishes we really adore. We eat this Swiss Chard Frittata at least once a week and my family, especially my children, NEVER get tired of it. My three year old will easily eat three pieces! It’s easy to make substitutions to make it dairy free, or gluten free, or even vegan. But for us, we love using our farm fresh eggs, fresh raw dairy milk, fresh picked chard and oregano and fresh ground sprouted organic wheat flour.
Swiss Chard Recipe
6-8 eggs
1/2 c. milk
1/4 c. oil or butter
2 T. flour
1/4 t. ea. salt & pepper
3/4 c. cheese
1 T. fresh basil or oregano or 1 t. dried & crushed (1/4 t. ground herbs)
1 1/2 c. Swiss Chard (rinsed, de-stemmed and chopped)
Mix all ingredients and bake in an 8″ x 8″ greased pan at 375 degrees for about 35 min. or until eggs are set.
